How's Ramadan during quarantine so far? Has your place lifted the lockdown and/or social restrictions? I hope everyone stays sane and fine during this challenging time.
It's time for me to lodge in the second report of my iftar cooking. Chicken Yellow Soup (Soto Ayam), coconut rice (nasi uduk) and fruits infused water with a little soursop syrup. Chicken Yellow Soup is my favourite FAVOURITE dish growing up, I will never a refuse a chance to indulge in a warm bowl of Soto Ayam, never.
It's a simple easy dish to make and everything turnt out so well and nicely. Soup is absolutely a refreshing menu to have for comfort, one of those times is iftar.
Husband loved loved this, so did I! I dry-sauteed the coconut rice before serving so they get a little drier and not mushy, that's the best rice consistency for Soto Ayam!
And for the drinks, I chucked in apple cubes this time along with lemon to make it fresher and healthier. Again, less syrup is better. Although husband reached for more syrup to put in there, told him to always keep things in moderation.
This menu today is so colourful, isnt it?! Makes me happy editing it and just looking at it.
