Ramadan Kareem! Ramadan Kareem to all of you celebrating.
Since I moved in with my now-husband, I took upon a habit of snapping a photo of the dish I made for the day. At first I kinda just did it because I wanted to remember. I wanted to remember what I've made and how they were made so it was to be kinda like a food diary for me.
And when I couldn't sleep last night I just had hours and hours to collect all of those photos and edit them. What they turnt out to be wasn't so bad, that's what I thought to myself. So I was thinking... I have a blog. I have contents. Why not write about it to the world? Amirite? I mean, nothing that I make is anything fancy schmancy, all home-cooked menus/meals. But hey, let a girl feel a little proud. Afterall, cooking is a labour of love.
Anyways, I'm thinking of making my first report about this new blog segment about my Ramadan Iftar Meals. I thought it would be a great idea since we're all only 5 days into Ramadan so, all my meals and updates are all still.. pretty recent and timely.
For the first day of iftar meal, I made a homemad Balado-seasoned eggs with coconut rice (nasi uduk) and caramelised dried tempeh (kering tempe) with cold soursop squash.
The balado eggs were kinda a fail this time since I was prepping iftar in a rush, so, yes, it is a bloodbath. Only, this was oil-bath to be precise. Sent the pic to my mum and she was calmly horrified about the flooding amount of oil I used lmfao I feel bad. But I promise you I make mad balado eggs. Made it wherever I was, Aussie or Indo, perfectly. I was just rushed this time around and dunked an obscene amount of oil mindlessly.
To counter the unhealthy amount of oil in ther (lmao), I did chuck in some sliced carrots and champignon mushrooms. Mostly you're supposed to put in potatoes, but we were kinda low on potatoes so these should do.
And what's coconut rice without fried shallots, am-I-right?! Mum, being the angelic person in my life, my guardian angel, and just my OG who always gets my back as a daughter, packed me a box of her homemade fried shallots that we used to always have at home before I moved out in a care package she sent me. It's the best. Crunchy and natural. The caramelised tempeh was also sponsored by mum and mum only, she personally cooked it and shipped it to me. It's the besttt. Mum is a legendddd.
Iced soursop squash was a delight to have too during iftar. Really refreshing. Tried to not have too much of the syrup here. I'd like to be on a low-sugar diet and thankfully so would my husband.
